April is the month when spring finally arrives for most of us. April is one of my favorite months because we can finally get out to ride our bicycles and enjoy the fresh air and sunshine. Here are some of our favorite biking locations.

Cycling the Rail Trails Around Ohio

Believe it or not Ohio has an amazing mostly paved rails-to-trails system. In fact, you can ride the trail from the Ohio River to Lake Erie! And many do! We’ve ridden parts of the trail and it takes the rider through some very scenic parts of Ohio.

Cycling Around San Antonio

The San Antonio Mission Trail is another of our favorites. Ride along the canal and up to five different Spanish Missions. There are even a few restaurants and breweries along the way.

Our Bike Ride from Lake Mead to the Hoover Dam

This was by far one of the most unusual locations we’ve biked so far. We rode from Lake Mead over to the top of the Hoover Dam!

Healthy Taco Stuffed Zucchini Boats

These taco boats are delicious and so easy to make! You can prep the zucchini boats ahead of time and even make the filling ahead as well. When you ready to make dinner, fill the boats with the filling, top with cheese and heat.

Where are we in April?

After a very busy March that took us to Baja California, Mexico, Tucson and Yuma Arizona, we’re slowing things down just a bit for April. We’re heading to Salt Lake City, Utah for the month. BUT we’re flying to Columbus, Ohio, for 2 weeks in April for those all-important yearly medical appointments! Here’s to good weather and clean bills of health for both of us! Because we’re back to exciting travel for May, and we don’t want to miss any of it!
